A delicious shortbread base topped with tangy, sweet, lemony goodness.
Lemon Shortbread Triangles
Ingredients
- 1 cup flour
- 1/2 cup icing sugar
- 1/2 cup cold butter
- 3 eggs
- 1 cup sugar
- 1 lemon (rind and juice)
- 1/4 cup flour
- 1/4 tsp baking powder

Instructions
- Heat oven to 350F.
- Sift dry ingredients and grate cold butter into mixture. Blend by hand or with pastry blender until butter is fully incorporated and mixture is crumbly. Press into the bottom of 9” x 9” baking dish. Bake crust for 20 minutes or until golden and evenly set.
- Blend eggs and sugar. Add rind and juice from lemon and stir. Add flour and baking powder and stir until well combined. Pour over warm crust. Bake for 20 - 25 minutes until set; top should be very lightly browned. Cool and refrigerate for 2 hours before cutting. Makes about 16.
